At Jerkdat, we celebrate the rich flavors and vibrant spirit of the Caribbean, brought to life by our passionate CEO and Chef, Cordia Elijah Brown. Born and raised in Kingston, Jamaica, Chef Cordia discovered his love for cooking at the young age of ten. Growing up in Trench Town, he began experimenting with food, often cooking fresh fish on a homemade roaster for his friends and family, sparking a lifelong passion for Caribbean cuisine.
Cordia’s journey led him to the New York Restaurant School, where he refined his skills before embarking on an illustrious culinary career across the United States. From line cook positions in renowned establishments in Los Angeles to serving as a Banquet Chef at the prestigious Cosmopolitan hotel in Las Vegas, he mastered his craft and grew his vision of sharing authentic Caribbean-American flavors with the world.
In 2019, Chef Cordia took the leap and opened Jerkdat in Las Vegas, combining Jamaican flavors with American culinary techniques. Since then, Jerkdat has become a trailblazer for Caribbean cuisine in the city, drawing in locals and visitors alike with its unique fusion and authenticity. His talent and commitment to excellence have led him to serve prominent figures and celebrities, including Dana White, Floyd Mayweather, and Terry Fator, and cater high-profile events at Las Vegas icons like Caesars Palace and Omnia.
Chef Cordia’s passion extends beyond the kitchen; he travels the world, from Europe to the Caribbean, expanding his knowledge of global cuisine to bring fresh, creative ideas to Jerkdat’s menu. Every dish is a blend of his roots, his travels, and his dedication to quality, making Jerkdat a true taste of the Caribbean in the heart of Las Vegas.
